Description

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups (105g) sweetened shredded coconut, toasted
  • 1 cup (100g) slivered almonds, toasted
  • 1 cup (170g) milk chocolate chips
  • ½ cup (85g) white chocolate chips (optional)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Toast the shredded coconut and slivered almonds in a skillet over medium heat for 3-5 minutes until golden and fragrant. Let cool completely.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  7. Fold in the toasted coconut, toasted almonds, and chocolate chips by hand.
  8. Scoop dough onto prepared baking sheets, spacing them about 2 inches apart. For best results, chill dough for 30 minutes.
  9. Bake for 10-12 minutes, or until edges are golden brown but centers look slightly soft. Rotate pans halfway through.
  10. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack. Sprinkle with flaky sea salt while warm.

Notes

Toast the coconut and almonds for deeper flavor. Do not overmix the dough to ensure soft cookies. Chill the dough to prevent spreading. Use room temperature butter for proper creaming. Store in an airtight container for up to 5 days.
