Ingredients
- 2 cans (15 oz each) black beans, drained and rinsed
- ½ cup rolled oats
- 1 tbsp ground flaxseed
- 3 tbsp water
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 chipotle peppers in adobo sauce, minced
- 1 tbsp adobo sauce
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tbsp fresh lime juice
- 1 tbsp low-sodium soy sauce
- 2 tbsp olive oil, divided
- Optional: ½ cup corn, ¼ cup fresh cilantro, 1 jalapeño
Instructions
- Grind the rolled oats into a coarse flour using a blender or by crushing them in a bag with a rolling pin.
- In a small bowl, mix the ground flaxseed with water and let sit for 5 minutes until gelatinous.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté the diced onion for 3-4 minutes until soft and translucent.
- Add the minced garlic and cook for 1 minute until fragrant. Remove from heat and let cool slightly.
- In a large bowl, mash the drained and rinsed black beans with a potato masher or fork, leaving some chunks for texture.
- Add the sautéed onion and garlic, ground oats, flax egg, minced chipotle peppers, adobo sauce, cumin, smoked paprika, lime juice, and soy sauce to the mashed beans. Mix well.
- Taste the mixture and adjust seasoning if needed.
- Divide the mixture into 4-6 patties, pressing them firmly to hold together.
- Heat the remaining 1 tablespoon of olive oil in the skillet over medium heat.
- Cook the patties for 3-4 minutes on each side until golden brown and crispy. Avoid moving them too much to ensure a good crust.
- Serve immediately on buns with desired toppings.
