Instructions
- Line an 8×8 inch pan with parchment paper, leaving overhang on the sides for easy removal.
- Combine peanut butter, powdered sweetener, and butter in a large microwave-safe bowl.
- Microwave on high for 30 seconds, then stir vigorously until the butter begins to melt.
- Microwave for another 30 seconds and stir again until the mixture is smooth, glossy, and runny. If needed, add one more 15-second burst, but do not overheat.
- Stir in the vanilla extract (and optional add-ins like sugar-free chocolate chips or crushed nuts).
- Pour the mixture into the prepared pan and spread evenly with a spatula.
- Refrigerate for at least 30 minutes or freeze for 15 minutes until firm.
- Lift the fudge out using the parchment handles and cut into 16 squares.
- Serve immediately or store in the refrigerator or freezer.
