Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease the parchment.
  2. Melt the butter in a microwave-safe bowl or saucepan. Let it cool for 2-3 minutes until warm but not hot.
  3. In a medium mixing bowl, whisk the melted butter, granulated sugar, and brown sugar vigorously for 1-2 minutes until the sugar is partially dissolved and the mixture looks glossy.
  4. Add the egg and vanilla extract to the butter mixture and whisk until smooth.
  5. Add the flour, baking powder, cream of tartar, and salt to the wet ingredients. Fold gently with a spatula or wooden spoon until just combined and no streaks of flour remain.
  6. Pour the batter into the prepared pan and spread evenly.
  7. In a small bowl, mix the 2 tablespoons of sugar and 1 teaspoon of cinnamon. Sprinkle evenly over the batter and press gently to adhere.
  8. Bake for 20-25 minutes, or until the edges are golden brown and pulling away from the sides, but the center still has a slight jiggle.
  9. Cool in the pan for at least 20-30 minutes before cutting into squares to allow them to set.

Notes

Do not overmix the batter to avoid tough blondies. Ensure the center still jiggles slightly when you take them out, as they will firm up while cooling. For best texture, use sticks of butter rather than tub spreads. If you don’t have cream of tartar, you can substitute with 1/2 teaspoon of lemon juice or white vinegar, though the texture will differ slightly.
