- 2–3 pounds beef chuck roast, cut into 1.5-inch cubes
- 1 can (12 oz / 355ml) Guinness Draught
- 2 cups (480ml) low-sodium beef broth
- 2 tablespoons all-purpose flour
- 2 tablespoons tomato paste
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 2 bay leaves
- Salt and black pepper to taste
- 2 large Yukon Gold or russet potatoes, cubed
- 3 large carrots, peeled and chopped into 1-inch pieces
- 2 medium parsnips, peeled and chopped
- 1 large yellow onion, diced
Instructions
- Prep ingredients: Cut beef into 1.5-inch cubes and pat dry. Chop onions, carrots, parsnips, and potatoes into 1-inch pieces. Mince garlic.
- Coat beef: In a large bowl, toss beef cubes with flour, salt, and pepper until evenly coated.
- Combine: Place coated beef in the bottom of a 6-quart slow cooker. Add diced onions, carrots, parsnips, and potatoes.
- Make sauce: In a separate bowl, whisk together Guinness, beef broth, tomato paste, Worcestershire sauce, minced garlic, dried thyme, and bay leaves.
- Cook: Pour the liquid mixture over the beef and vegetables. Stir gently to combine. Cover and cook on LOW for 8 hours.
- Check and adjust: After 8 hours, ensure beef is fork-tender. If sauce is too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir in; cook on HIGH for 30 minutes to thicken. Remove bay leaves.
- Serve: Serve immediately in large bowls. Top with fresh parsley if desired. Pair with crusty bread or mashed potatoes.
Notes
Do not cook on HIGH as the beef may become tough. For a richer sauce, stir in a tablespoon of cold butter at the end. If using pre-cut vegetables, ensure they are uniform in size to prevent mushiness. Leftovers taste better the next day as flavors meld.
