- 2 cups old-fashioned rolled oats
- 1 cup creamy natural peanut butter
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
- 2 tablespoons ground flaxseed
- 1/2 teaspoon sea salt
Instructions
- Line a baking sheet with parchment paper and ensure peanut butter is at room temperature.
- In a large mixing bowl, stir together the peanut butter, honey, and vanilla extract until smooth and well combined.
- Add the rolled oats, ground flaxseed, and sea salt to the wet mixture. Stir thoroughly until all oats are coated and there are no dry patches.
- Fold in the mini chocolate chips (and any optional add-ins) until evenly distributed.
- Cover the bowl and chill in the refrigerator for at least 15 minutes to firm up the mixture.
- Scoop about 1 tablespoon of mixture and roll between palms to form balls. Place on the prepared baking sheet. If mixture sticks, wet hands slightly with water.
- Refrigerate the rolled bites for at least 1 hour to set completely before serving.
Notes
Do not use quick oats or steel-cut oats as they affect texture. If the mixture is too dry, add more honey; if too wet, add more oats. For uniform size, use a cookie scoop. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
