Description

A quick, no-bake breakfast or snack made with oats, peanut butter, honey, and chocolate chips. These energy bites are perfect for busy mornings, travel, or meal prep.


Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup creamy natural peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips
  • 2 tablespoons ground flaxseed
  • 1/2 teaspoon sea salt

Instructions

  1. Line a baking sheet with parchment paper and ensure peanut butter is at room temperature.
  2. In a large mixing bowl, stir together the peanut butter, honey, and vanilla extract until smooth and well combined.
  3. Add the rolled oats, ground flaxseed, and sea salt to the wet mixture. Stir thoroughly until all oats are coated and there are no dry patches.
  4. Fold in the mini chocolate chips (and any optional add-ins) until evenly distributed.
  5. Cover the bowl and chill in the refrigerator for at least 15 minutes to firm up the mixture.
  6. Scoop about 1 tablespoon of mixture and roll between palms to form balls. Place on the prepared baking sheet. If mixture sticks, wet hands slightly with water.
  7. Refrigerate the rolled bites for at least 1 hour to set completely before serving.

Notes

Do not use quick oats or steel-cut oats as they affect texture. If the mixture is too dry, add more honey; if too wet, add more oats. For uniform size, use a cookie scoop. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
