  • 1 large head butter lettuce (Bibb lettuce)
  • 4 stalks green onions, chopped
  • 2 medium carrots, julienned or grated
  • 1 small red bell pepper, diced
  • 1 can water chestnuts, drained and chopped
  • 2 tablespoons (32g) natural unsweetened peanut butter
  • 3 tablespoons (45ml) low-sodium soy sauce
  • 1 tablespoon (15ml) unseasoned rice vinegar
  • 1 teaspoon sriracha (adjustable)
  • 1 tablespoon (15ml) honey
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 23 tablespoons water
  • 1 teaspoon sesame oil
  • Optional: fresh cilantro, crushed peanuts, lime wedges

Instructions

  1. Prep veggies: Chop green onions, julienne or grate carrots, dice bell pepper, and chop water chestnuts. Set aside.
  2. Make sauce: In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, sriracha, honey, garlic, ginger, and sesame oil. Gradually whisk in 2 tablespoons of water until smooth and pourable. Adjust seasoning to taste and set aside.
  3. Brown turkey: Heat a large skillet over medium-high heat. Add ground turkey, breaking it up with a wooden spoon. Cook for 6-8 minutes until browned and no longer pink. Drain excess fat if necessary.
  4. Add veggies: Add green onions, carrots, bell pepper, and water chestnuts to the skillet with the turkey. Stir and cook for 2-3 minutes until veggies are tender-crisp.
  5. Combine and finish: Reduce heat to low. Pour the prepared sauce over the turkey and vegetable mixture. Stir to coat evenly and simmer for 1-2 minutes until the sauce thickens slightly.
  6. Assemble and serve: Wash and dry butter lettuce leaves. Place a generous spoonful of the turkey mixture in each leaf. Top with cilantro and crushed peanuts if desired. Serve immediately with lime wedges.

Notes

Do not overcrowd the pan when browning turkey to ensure proper browning rather than steaming. Use fresh ginger for best flavor. Drain water chestnuts well to prevent sogginess. The lettuce should be stored separately from the filling to prevent wilting. This recipe does not freeze well due to the lettuce.
