  • 12 slices (340g) thick-cut bacon
  • 1 large yellow onion, diced (about 300g)
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 2 cups (200g) sharp cheddar cheese, shredded
  • ½ cup (120ml) heavy cream
  • ½ cup (120g) pickle relish or diced dill pickles
  • 2 tablespoons Dijon mustard
  • 3 large eggs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Optional toppings: chives, extra crumbled bacon, or sliced green onions

Instructions

  1. Preheat oven to 375°F (190°C). Chop onion, mince garlic, and shred cheese. Crumble bacon into small pieces.
  2. In a large skillet or Dutch oven, cook bacon over medium heat until crispy. Remove bacon and drain on paper towels, leaving about 1 tablespoon of bacon fat in the pan.
  3. Add ground beef to the pan with the bacon fat. Break it up and cook until no longer pink (8-10 minutes). Add diced onion during the last 3 minutes. Drain excess grease if necessary, then stir in minced garlic for the last minute.
  4. In a separate bowl, whisk together heavy cream, eggs, Dijon mustard, salt, and black pepper until smooth.
  5. Return the beef and onion mixture to the skillet (or transfer to a 9×13 inch baking dish). Stir in pickle relish. Pour the egg and cream mixture over the beef and stir gently to combine.
  6. Sprinkle shredded cheddar cheese evenly over the top, followed by the crumbled bacon.
  7. Bake for 20-25 minutes until the eggs are set and the cheese is bubbly and golden. A knife inserted in the center should come out clean.
  8. Remove from oven and let rest for 5 minutes before serving to allow the casserole to set. Garnish with fresh chives or green onions if desired.

Notes

Do not skip the resting time; the eggs need 5 minutes to set so the casserole is sliceable. Use sharp cheddar for better flavor. Ensure bacon is crispy before adding to prevent sogginess. Drain excess grease from beef to avoid a watery casserole, but leave some moisture for the sauce.
