  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup dark chocolate chips (170g)
  • Optional: ½ cup walnuts or pecans (60g)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5 inch loaf pan with parchment paper, leaving an overhang on the long sides for easy removal.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth.
  3. Add the oil, sugar, eggs, and vanilla extract to the mashed bananas. Whisk or stir vigorously until the mixture is glossy and smooth.
  4. Add the flour, baking soda, and salt to the wet ingredients. Stir gently with a wooden spoon or spatula until just combined and no white streaks remain. Do not overmix.
  5. Gently fold in the chocolate chips (and nuts if using).
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes. Check at 50 minutes by inserting a toothpick into the center; it should come out clean or with moist crumbs. If the top browns too quickly, tent with foil for the last 15 minutes.
  8. Let the bread cool in the pan for 10 minutes, then lift it out using the parchment paper handles and transfer to a cooling rack. Cool completely before slicing.
