Description

  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 23 tbsp milk
  • Optional: 1/2 cup mini chocolate chips or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, whisk together pumpkin puree, sugar, oil, egg, and vanilla extract until smooth.
  3. In a separate bowl, sift together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Pour dry ingredients into wet mixture. Stir gently until just combined. Do not overmix.
  5. Scoop about 2 tablespoons of batter onto prepared baking sheets, spacing them 2 inches apart.
  6. Bake for 10-12 minutes until cakes spring back lightly to the touch and tops look set.
  7. Let cakes cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. While cakes cool, beat softened butter until creamy. Gradually add powdered sugar, vanilla, salt, and milk. Beat on high for 2-3 minutes until light and fluffy.
  9. Spread a generous spoonful of filling on the flat side of a cooled cake half and sandwich with another cake half.
  10. Repeat until all cakes are filled to make 12 whoopie pies.

Notes

Ensure you use 100% pure pumpkin puree, not pumpkin pie mix. Do not overmix the batter to keep cakes tender. Cakes must cool completely before filling to prevent the filling from melting. These can be frozen for up to 3 months.
