Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Toast pecan halves in a dry skillet over medium heat for 3-5 minutes until fragrant. Spread on a plate to cool completely.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium-high speed for 2-3 minutes until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract until just combined.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Add dry ingredients to the wet mixture and beat on low speed until just combined. Do not overmix.
  6. Fold in the cooled, toasted pecans using a wooden spoon or spatula.
