  • 2 tablespoons unsalted butter
  • 2 cups Gruyere cheese, freshly grated
  • 2 cups heavy cream
  • 1 cup low-sodium chicken or vegetable broth
  • 4 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • Kosher salt and freshly cracked black pepper
  • 1/4 cup Parmesan cheese, grated
  • 2 tablespoons panko breadcrumbs (optional)
  • 1 teaspoon melted butter (for breadcrumbs, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 2.5-3 quart casserole dish with unsalted butter.
  2. Peel potatoes and slice into 1/8-inch thick rounds. Soak slices in cold water for 10 minutes to remove starch, then drain and pat dry.
  3. In a large bowl, whisk together heavy cream, broth, minced garlic, Dijon mustard, dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  4. Layer half the potato slices in the dish, overlapping slightly. Sprinkle with some Gruyere cheese. Repeat layers until all potatoes are used (about 4-5 layers).
  5. Pour the cream mixture evenly over the potatoes. Press down gently to help absorption.
  6. Cover tightly with aluminum foil and bake for 45 minutes.
  7. Remove foil, sprinkle remaining Gruyere and Parmesan (and breadcrumbs if using) on top.
  8. Bake uncovered for 20-25 minutes until top is golden brown and potatoes are fork-tender.
  9. Let rest for 10 minutes before serving to allow sauce to thicken.

Notes

For best results, grate your own cheese as pre-shredded cheese contains anti-caking agents that prevent smooth melting. Uniform potato slices are crucial for even cooking. This dish can be assembled up to 24 hours in advance and refrigerated; add 10-15 minutes to baking time if starting from cold. Do not freeze leftovers as the dairy will separate.
