Description
A rich, creamy, and elegant holiday side dish featuring tender Yukon Gold potatoes layered with nutty Gruyere cheese and a savory cream mixture, topped with a golden, crispy crust.
Ingredients
- 3–4 pounds Yukon Gold potatoes
- 2 tablespoons unsalted butter
- 2 cups Gruyere cheese, freshly grated
- 2 cups heavy cream
- 1 cup low-sodium chicken or vegetable broth
- 4 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1 teaspoon dried thyme
- Kosher salt and freshly cracked black pepper
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons panko breadcrumbs (optional)
- 1 teaspoon melted butter (for breadcrumbs, optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 2.5-3 quart casserole dish with unsalted butter.
- Peel potatoes and slice into 1/8-inch thick rounds. Soak slices in cold water for 10 minutes to remove starch, then drain and pat dry.
- In a large bowl, whisk together heavy cream, broth, minced garlic, Dijon mustard, dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Layer half the potato slices in the dish, overlapping slightly. Sprinkle with some Gruyere cheese. Repeat layers until all potatoes are used (about 4-5 layers).
- Pour the cream mixture evenly over the potatoes. Press down gently to help absorption.
- Cover tightly with aluminum foil and bake for 45 minutes.
- Remove foil, sprinkle remaining Gruyere and Parmesan (and breadcrumbs if using) on top.
- Bake uncovered for 20-25 minutes until top is golden brown and potatoes are fork-tender.
- Let rest for 10 minutes before serving to allow sauce to thicken.
Notes
For best results, grate your own cheese as pre-shredded cheese contains anti-caking agents that prevent smooth melting. Uniform potato slices are crucial for even cooking. This dish can be assembled up to 24 hours in advance and refrigerated; add 10-15 minutes to baking time if starting from cold. Do not freeze leftovers as the dairy will separate.
