  • ¼ cup (25g) grated parmesan cheese
  • 1 tablespoon dried parsley (or 2 tablespoons fresh, chopped)
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. In a small bowl, combine softened butter, minced garlic, dried parsley, dried oregano, garlic powder, salt, and red pepper flakes. Mix until a smooth paste forms.
  3. Slice the French loaf in half lengthwise, leaving a small hinge at the end to keep it together.
  4. Spread the herb butter paste generously over the cut sides of the bread.
  5. Sprinkle mozzarella and cheddar cheese over the butter, then top with parmesan cheese.
  6. Bake for 15-18 minutes until the cheese is melted, bubbly, and slightly golden, and the bread edges are crispy.
  7. Let cool for 2-3 minutes to allow cheese to set slightly, then pull apart into chunks and serve warm.

Notes

Use softened butter, not melted, to prevent soggy bread. Shred your own cheese to ensure smooth melting. Let the bread cool slightly before pulling apart to prevent burning fingers and ensure the cheese holds together. For a gluten-free version, use a gluten-free loaf but reduce butter slightly as GF bread can get soggy faster.
