Description
A quick and easy copycat appetizer featuring large cremini mushrooms stuffed with a creamy, spicy buffalo chicken mixture and topped with melted cheddar cheese.

- 2 lbs large cremini mushrooms (about 24-30)
- 2 cups shredded cooked chicken (rotisserie recommended)
- 8 oz cream cheese, softened
- 1/2 cup hot sauce (Frank’s RedHot Classic recommended)
- 1/2 cup creamy ranch dressing
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup shredded sharp cheddar cheese
- 2–3 stalks green onions, sliced
- Celery leaves, chopped (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
- Clean mushrooms and gently scoop out the stems to create a cup shape. Pat caps dry thoroughly with paper towels.
- In a medium bowl, mix softened cream cheese, shredded chicken, hot sauce, ranch dressing, garlic powder, and onion powder until smooth.
- Pack the chicken mixture firmly into each mushroom cap.
- Sprinkle shredded cheddar cheese generously over each stuffed mushroom.
- Bake for 15 minutes, or until mushrooms are tender, filling is bubbly, and cheese is golden brown.
- Remove from oven and let cool for 2-3 minutes.
- Garnish with sliced green onions and celery leaves before serving warm.
Notes
Ensure mushrooms are patted completely dry to prevent sogginess. Cream cheese must be softened to room temperature for smooth mixing. Can be assembled up to 4 hours ahead and refrigerated before baking. Do not freeze as texture becomes mushy.
