  • 2 tablespoons green onions, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a standard 12-cup muffin tin with butter or cooking spray.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar until evenly combined.
  3. In a separate bowl, whisk the eggs, buttermilk, and melted butter until smooth and slightly frothy.
  4. Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just moistened; do not overmix.
  5. Fold in the crumbled bacon, diced jalapeños, shredded cheese, and green onions (if using).
